Tasting Notes

On first observation this wine has a lovely deep hue. There is signature spice on the nose, quite broody in style, cedar, cherry and plum with background notes of compote and star anise. The layers on the nose keep revealing more detail as the wine opens up. On the palate classic pinot noir characters cushion the spicey profile. The elegant and balanced acid provides freshness and levity to the spice and oak. Integrated fine tannin sits into the fruit and is carried the full length on the palate.



Process

Harvested from the third week of February 2021 through to the first week of March. Wine making was a combination of destemmed and whole bunch fermentation.  No fruit was crushed. The whole bunch/ whole berry ferment was kept on skins for 7 days, with a rundown and then gentle foot plunge to ensure all sugars were released from whole berries on day 6. Pressed to tank and then run off to barrel for malolactic fermentation.

20% new French Oak, balance in older barrels.
