Perfect for when you want to add a little sparkle.
Delicate pale yellow with a green tinge in colour, this is a bright sparkling driven by lemon and pear skin with hints of marzipan and baked French pastry. Drool. Celebrating with someone special? Enjoy with freshly shucked oysters. This is made respecting the traditions of Champagne (the region in France) and would be considered Extra Brut.

Tasting Notes
Delicate pale yellow with an edge of green in colour, this sparkling wine is made from a blend of Chardonnay and Pinot Noir. The bouquet is bright and driven by lemon, pear skin and an exotic subtle marzipan perfume mixed with suggestions of baked French pastry. The palate is lively and exhibits fresh lemon and Granny Smith apples complemented by an interwoven chalky minerality.
This wine has spent 3 years in bottle providing yeast autolysis influences on the palate and provides further complexity to our traditionally made sparkling wine.
Winemaking
Made with classic champagne winemaking techniques, three years on lees. In November 2019 the wine was disgorged, with a very low dose of liqueur added back to the wine to balance out acidity. In Champagne terms this is considered to be Extra Brut at 4gL RS.
