This very special drop is the perfect way to add a little sparkle to every occasion.

COLOUR, AROMA AND PALATE

Delicate pale yellow with an edge of green in colour, this sparkling wine is made from a blend of Chardonnay and Pinot Noir.

The bouquet is bright and driven by lemon, pear skin and an exotic subtle Marzipan perfume mixed with suggestions of baked French pastry.

The Palate is lively and also exhibits fresh lemon, Granny Smith apples complemented by an interwoven chalky minerality. This wine has spent 3 years in bottle providing yeast autolysis influences on the palate and provides further complexity to this traditionally made sparkling wine from Zonzo Estate.

 

THE FACTS

Fruit was harvested early in the 2016 season by hand. It was then pressed to a yield of 512L per tonne to produce an elegant wine and in honour of the long tradition of making this variety in Champagne. Pressed to tank and chilled to allow the juice to settle. Two days later the clear juice was decanted from the solids and inoculated with classic sparkling yeast. The ferment was complete at 0.10g/L residual sugar. This created the base wine.

Following vintage the base wine was mixed with a sweet liqueur and yeast, then bottled into the bottle it is held in today. Fermentation was completed in bottle and then it rested in this state (sur lees) for three years.

In November 2019 the wine was disgorged with a very slow dose of liqueur added back to the wine to balance out the acidity. In Champagne terms this wine is considered to be Extra Brut at 3.5gL RS.
