Tasting Notes


Pale green in colour with an aroma of freshly cut fruit salad. On the palate you get tastes balancing between mild citrus tang and fruity sweetness. Best paired with cheese boards and antipasto with friends. A very drinkable wine.

Process

Grapes were picked in the 2nd week of March 2020. Very gentle press cycle with minimum tumbling. Free run juice chilled and settled for three days. Clear juice was racked off to another tank and allowed to warm for a few days, aromatic yeast was added. Ferment was kept cool and monitored every day. Ferment was complete after two weeks, tank was then warmed slightly to finish. Wine is left to settle for 7 days and the clear new wine is racked off the lees.
