Tasting Notes

Pecorino is a white Italian grape variety originating from the eastern side of mid-Italy. This was a tiny production with only 100 dozen made. Rare is an understatement. This Pecorino has a savoury nose with pear and citrus in the background, orange and almond. The palate reflects the perfume of the nose but with added texture from the fruit and a clean dry finish. The acidity is well balanced by some richness and generous mouthfeel. It has great length on the palate full of savoury dry crunch and the lovely texture imparted by skins.

This tiny batch has so much detail it will keep you discovering new elements to the very last drop.

Process

Machine picked the 23 February 2021.

Pressed to tank. Chilled and settled for 2 days then racked to tank. Wild fermented partially in tank and oak, all older oak.
